Southern Charm cocktail

I had brunch with some of my Hampton Pirates on a rainy Saturday. The weather was dreadful, but the company was delightful. Plus, I love a good brunch. As I looked over the cocktail menu, I saw the makings of a fine cocktail – Southern Charm: Four Roses, Varnelli Sibilla, honey, lemon and black tea. Truthfully, I didn’t know what Varnelli Sibillla is; but trusty Google did the trick. It’s an Amaro that is sweetened with honey. All the hallmarks for a wonderful pre-brunch cocktail with the Varnelli Sibilla acting as an aperitif. And yet it wasn’t. The drink was very weak and unbalanced. I didn’t taste any bitters – which I guess is a good thing; but it tasted like colored water. I had my brunch companions taste it to see if maybe my taste of the cocktail. No, it was not. I love the ingredients, but not the execution. This is a cocktail I’m handing over to Kimberly Elise to refine because I’m convinced it should be good, if not great.
