Peppermint Bark

It’s 60s degrees on Christmas. If I wanted temperatures in the 60s on December 25th, I would be living in Florida where Santa wears shorts. On top of Omicron restricting my holidays, I must deal with unseasonably warm temperatures. I have my own person summers, enough already.

RANT OVER.

I am forcing myself into the Christmas spirit with Peppermint Bark. Chocolate, mint and bourbon – I have the makings of a thin mint cocktail; alas this is more bourbon forward than chocolate – welcome to Covid Christmas.

Peppermint Bark cocktail

Under ‘normal’, whatever that is, circumstances I would garnish with a candy cane.

This is easy to assemble – 1.5 oz of bourbon or more 😉 half an ounce of peppermint schnapps. Anymore and it overpowers the bourbon. I don’t have peppermint schnapps or any schnapps for that matter on hand usually. Just typing the word brings the shakes on and conjures peach schnapps from the 80s. That was truly a dreadful drink, but as I said, I’m forcing myself to have some Christmas spirit. 

Anyhoots, back to my cocktail, add ONE dash of chocolate bitters. You know me and bitters. One drop brings the chocolate to the nose and balances the sweetness of the peppermint schnapps.  

Voila, Peppermint Bark. It’s quite tasty.
