Blackberry Bramble* Cocktail

I was brunching with the girls at a cute spot that we haven’t visited in a while. I had a full day ahead of me, so it wasn’t as leisurely as I would have preferred; but always a great time when I sneak away and spend time with my girls. I had a pineapple mimosa but what was especially delicious was my blackberry lemon French toast. Hello! The lemo was creamy, not quite as thick as a curd but wonderfully tart and the combination was delicious.

Of course my mind was off and running about cocktails with this flavor profile. I’ve made a Lemon Flop with lemon curd and loved it. I’ve also made berry smashes in the past; but I can’t recall adding the two and this flavor profile was top of mind; so, I got busy.

This one is easy but took a bit of finessing to get the taste I wanted. The proportions are to my liking – which in this instance means I wanted to balance the lemon and not overpower the blackberry flavor. A splash of Chambord evened the tartness of the lemon nicely.

 *A bramble typically uses gin and balances the sweet with the sour. I much prefer bourbon. Creative license and all that jazz.
